To kick off Pizza Friday-I decided to make a dish that would nutritious and fun, and incorporating ideas that may not work completely. Making dinner for just me does have its perks sometimes- I can experiment to my hearts content and not worry that people will go hungry if I fail. (Thankfully John is ever encouraging, and though he raises an eyebrow occasionally, he is always willing to try.)

This was a delicious variation on pizza and one that I'll definitely be making again very soon-though I cant wait to start dreaming up other ideas for Pizza Fridays!
